Ingredients
  

Peach Filling

  • 2 cups fresh peaches peeled and cubed

Cookie Cupcake Batter

  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder

Preparation

  • In a saucepan over medium heat, combine the cubed peaches, sugar, and cinnamon. Stir occasionally, cooking until the peaches soften and the mixture thickens, about 10 minutes. Set aside to cool.
  • Preheat your oven to 350°F. Line a cupcake tray with paper liners.
  • In a large mixing bowl, cream together the softened butter and sugar using an electric mixer until light and fluffy. Add eggs one at a time, beating well after each. Mix in the vanilla extract.
  • Gradually add the flour and baking powder to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • Spoon a layer of batter into each cupcake liner, followed by a spoonful of peach filling. Top with more batter to cover the filling.
  • Place the cupcake tray in the preheated oven and bake for 20-25 minutes or until the cupcakes are golden brown and a toothpick inserted into the center comes out clean.
