  • 1 Mixing Bowl large
  • 1 electric mixer or hand mixer
  • 1 piping bag for ganache

Ingredients

Dry Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 tsp salt

Wet Ingredients

  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1 tsp pure vanilla extract

Chocolate Ganache

  • 1/2 cup heavy cream
  • 1 cup semi-sweet chocolate chips

Instructions

Preparation

  • Preheat your oven to 350°F and line a cupcake tin with 12 paper liners.
  • In a large bowl, whisk together the flour, cocoa powder, and salt until combined.
  • In another bowl, cream the butter and sugar using an electric mixer until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the chocolate chips.
  • Divide the batter evenly among the cupcake liners. Bake for 18-20 minutes or until the tops are set and a toothpick comes out with a few moist crumbs.
  • Heat the heavy cream in a small saucepan over medium heat until just beginning to simmer. Pour over chocolate chips in a bowl and let sit for 2 minutes, then stir until smooth.
  • Allow cupcakes to cool in the pan for 10 minutes before transferring to a wire rack. Once cool, use a piping bag to fill each cupcake with chocolate ganache.
