  • 2 large eggs

  • 1/4 tsp baking powder

  • 1 cup shredded coconut unsweetened

  • Preheat oven to 350°F. Grease a 9x9 inch baking pan. In a large mixing bowl, whisk together melted butter and sugar until smooth. Add eggs one at a time, beating well after each. Stir in vanilla.
  • In another bowl, sift cocoa powder, flour, salt, and baking powder. Gradually add to the wet ingredients, mixing until just combined. Fold in chocolate chips.
  • Pour batter into prepared pan, spreading evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs. Cool in pan on a wire rack.
  • While brownies cool, spread coconut on a baking sheet. Toast in oven for 5-7 minutes, stirring occasionally, until golden brown. Cool completely.
