Crumb Topping

  • 1/2 cup unsalted butter cold and cubed
  • 1/2 cup brown sugar
  • 1 cup all-purpose flour
  • 1 tsp cinnamon

Instructions
 

Preparation

  • Preheat the oven to 350°F. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Gradually add the dry ingredients to the wet mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix just until combined.
  • In a medium bowl, combine the cold, cubed butter, brown sugar, flour, and cinnamon. Use a pastry cutter or fork to mix until the mixture resembles coarse crumbs.
  • Pour the batter into the prepared cake pan and spread evenly. Sprinkle the crumb topping over the batter, covering it completely.
  • Place the cake in the preheated oven and bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.

Serving

  • Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and serve with coffee or tea.
