Equipment

  • 1 electric mixer for whipping egg whites

Ingredients
  

Coconut Mixture

  • 4 cups unsweetened shredded coconut
  • 1 can 14 ounces sweetened condensed milk
  • 1 teaspoon vanilla extract

Egg Whites

  • 2 large egg whites
  • 1/4 teaspoon salt

Instructions
 

Preparation

  • In a medium mixing bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract. Stir until the mixture is well combined and the coconut is evenly coated.
  • In a separate bowl, use an electric mixer to beat the egg whites and salt until soft peaks form. This will take about 3-5 minutes.
  • Gently fold the whipped egg whites into the coconut mixture. Be careful not to deflate the egg whites.
  • Using a small ice cream scoop or a spoon, scoop the mixture into mounds on the prepared baking sheet, spacing them about 1 inch apart.
  • Preheat the oven to 325°F (165°C). Bake the cookies for 20-25 minutes, or until the tops are golden brown. Rotate the baking sheet halfway through baking.

Serving

  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Serve as a delightful dessert or snack.

  • Store the cooled cookies in an airtight container at room temperature for up to one week. For longer storage, freeze in a sealed container for up to three months.
