  • 1/2 cup brown sugar packed
  • 1/2 cup molasses
  • 2 large eggs room temperature
  • 1 cup whole milk
  • 1 tsp vanilla extract

Instructions
 

Preparation

  • In a large bowl, cream together the butter and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the molasses and vanilla extract.
  • In a separate bowl, sift together the flour, baking powder, baking soda, ginger, cinnamon, cloves, and salt. Gradually add the dry ingredients to the wet ingredients alternately with the milk, beginning and ending with the flour mixture. Mix until just combined.
  • Divide the batter evenly between the prepared cake pans. Bake in a preheated oven at 350°F for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Serving

  • Place one cake layer on a serving plate and spread a layer of frosting on top. Place the second layer on top and frost the top and sides of the cake. Decorate as desired with gingerbread cookies or festive sprinkles.
  • Slice and serve with warm beverages such as spiced cider or hot chocolate for a cozy holiday treat.
