Ingredients
  

Cookie Base

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs

Cream Cheese Frosting

  • 8 oz cream cheese softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp lemon zest

Fruit Toppings

  • 1 cup strawberries sliced
  • 1/2 cup blueberries
  • 1 kiwi peeled and sliced
  • 1 mango diced

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer until light and fluffy. Add the eggs one at a time, beating well after each addition.
  • In a separate bowl, whisk together the all-purpose flour and baking powder. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Roll the dough into small balls and place them on the prepared baking sheet. Flatten each ball slightly with the palm of your hand.
  • Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are golden brown. Remove from the oven and allow to cool on a wire rack.

Prepare the Frosting

  • While the cookies are cooling, prepare the frosting. In a mixing bowl, beat the softened cream cheese and powdered sugar until smooth and creamy. Add the vanilla extract and lemon zest, mixing until fully incorporated.
  • Once the cookies have cooled completely, spread a generous layer of cream cheese frosting over the top of each cookie.
  • Decorate the frosted cookies with an assortment of fresh fruit. Arrange the fruit in a pattern or design of your choice.
