Cream Cheese Frosting

  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 3 cups powdered sugar
  • 1 tsp vanilla extract

Preparation

  • Preheat your oven to 350°F. Line a baking sheet with parchment paper and set aside.
  • In a large mixing bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  • Using an electric mixer, cream the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3 minutes.
  • Mix in the eggs one at a time, followed by the vanilla extract and red food coloring. Beat until well combined.
  • Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Mix until just combined, being careful not to overmix.
  • Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes or until the edges are set. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Frosting

  • In a clean bowl, beat the softened cream cheese and butter until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until fully incorporated.
  • Once the cookies are completely cooled, spread or pipe the cream cheese frosting on top of each cookie. Decorate as desired.
