Preparation

  • Preheat your oven to 350°F. Grease and flour a 9-inch round cake pan. In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In another bowl, cream the butter and sugar together until light and fluffy using an electric mixer. Add eggs one at a time, beating well after each addition. Mix in vanilla extract, orange zest, and orange juice.
  • Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Fold in the cranberries.
  • Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 50 minutes or until a toothpick inserted into the center comes out clean.

Serving

  • Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. Slice and serve as desired.
