Frosting

  • 1/2 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1/2 tsp almond extract
  • 2 tbsp milk

Instructions
 

Preparation

  • Cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the almond extract. In a separate bowl, combine the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, until fully combined. Gently fold in the cherries.
  • Preheat the oven to 350°F (175°C). Pour the batter into a greased and floured 9-inch round cake pan. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  • Beat the butter until creamy. Gradually add the powdered sugar, beating until smooth. Stir in the almond extract and milk until you reach the desired consistency.
  • Once the cake is completely cooled, spread the frosting evenly over the top and sides of the cake. Garnish with additional cherries and almond slices if desired.

Serving
