  • 1 tsp baking powder

Wet Ingredients

  • 1/2 cup unsalted butter softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 1 cup buttermilk

Strawberry Crunch Topping

  • 1 cup strawberry-flavored cereal crushed
  • 1/4 cup unsalted butter melted
  • 1/4 cup granulated sugar

Instructions
 

Preparation

  • In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In another bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  • Gradually add the dry ingredients to the creamed mixture alternately with buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
  • Pour the batter into a greased and floured 9x13 inch pan and spread evenly.
  • Bake in a preheated oven at 350°F for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Combine crushed cereal, melted butter, and sugar in a small bowl. Mix until combined and crumbly.
  • Once the cake is baked, remove from oven and spread softened butter on top. Sprinkle the cereal mixture evenly over the cake and press lightly to adhere.

Serving

  • Allow the cake to cool completely before slicing. Serve with fresh strawberries on the side for an added touch.
