Preparation

  • Preheat oven to 350°F (175°C). Line a muffin tin with paper liners. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Beat in eggs one at a time and add vanilla extract. In another bowl, whisk flour, baking powder, and salt. Gradually add dry ingredients to the wet mixture, alternating with milk. Mix until just combined.
  • Divide batter evenly among the cupcake liners, filling each about two-thirds full. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  • Puree raspberries in a blender and strain to remove seeds. In a mixing bowl, beat butter until creamy. Gradually add powdered sugar, beating until smooth. Mix in vanilla extract and raspberry puree. Adjust consistency with heavy cream if needed.
  • Once cupcakes are completely cool, pipe or spread frosting over each. Decorate with additional raspberries if desired.
