Instructions
 

Preparation

  • Preheat your oven to 350°F and line a cupcake pan with paper liners.
  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large mixing bowl, cream the butter and sugar together using an electric mixer until light and fluffy, about 3 minutes.
  • Add the eggs one at a time, beating well after each addition. Mix in the coconut milk, lime juice, and lime zest.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
  • Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full.
  • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  • Allow the cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
