Equipment

  • 1 Baking Sheet lined with parchment paper
  • 1 Rolling Pin
  • 1 Mixing Bowl large

Ingredients

Cookie Dough

  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1 tsp vanilla extract

Cinnamon Swirl

  • 1/4 cup unsalted butter melted
  • 2/3 cup brown sugar
  • 2 tbsp ground cinnamon

Vanilla Glaze

  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla extract

Instructions

Preparation

  • In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.
  • Roll the dough out into a large rectangle on a floured surface. Brush the melted butter over the dough and sprinkle with brown sugar and cinnamon.
  • Roll the dough tightly into a log, then slice into 1/2-inch thick cookies. Place on prepared baking sheet.
  • Chill the cookie slices in the refrigerator for about 20 minutes to help maintain their shape while baking.
  • Preheat the oven to 350°F (175°C). Bake the cookies for 10 to 12 minutes or until the edges are lightly golden. Allow to cool on a wire rack.

Serving

  • Once the cookies are cool, prepare the glaze by whisking together powdered sugar, milk, and vanilla. Drizzle the glaze over the cookies and let it set before serving.

Storage

  • Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze in a freezer-safe bag for up to three months.
