Instructions
 

Preparation

  • Preheat your oven to 350°F. In a large mixing bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  • In another bowl, combine the flour, baking powder, and salt. Gradually add to the wet ingredients, alternating with milk. Mix until just combined. Fold in chocolate chips.
  • Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Serving

  • To make the frosting, beat together butter, powdered sugar, vanilla, and milk until smooth. Spread or pipe onto cooled cupcakes. Garnish with extra chocolate chips if desired.
