Equipment

  • 1 9-inch round cake pan greased and floured
  • 1 electric mixer
  • 1 Mixing Bowl large

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Wet Ingredients

  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 1 tbsp rose water
  • 1 cup milk

Additional Ingredients

  • 1/2 cup ground pistachios
  • 1 tsp lemon zest

Instructions

Preparation

  • Preheat your oven to 350°F. Grease and flour a 9-inch round cake pan. In a large mixing bowl, cream the softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and rose water. In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add dry ingredients to the wet mixture, alternating with milk. Finally, fold in ground pistachios and lemon zest.
  • Pour the batter into the prepared pan, smoothing the top. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Serving

  • Beat together softened butter, powdered sugar, and rose water until smooth. Add pink food coloring for a pastel hue. Once the cake is cool, spread frosting over the top, and sprinkle with chopped pistachios. Add edible rose petals for decoration, if desired.
  • Cut the cake into 8 slices and serve. Pair with tea or coffee for a delightful experience.

Storage

  • Store leftover cake in an airtight container at room temperature for 2-3 days, or refrigerate for up to a week. For longer storage, wrap slices individually and freeze for up to 3 months.
