Ingredients
  

Lemon Flower Tarts

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter chilled and diced
  • 1/4 cup powdered sugar
  • 1/2 cup lemon curd
  • Edible flowers for garnish

Raspberry Cream Puffs

  • 1/2 cup water
  • 1/4 cup unsalted butter
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 cup heavy cream
  • 1/4 cup raspberry preserves

Chocolate Mint Mini Cakes

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter softened
  • 1 cup sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1/2 tsp peppermint extract
  • Green food coloring optional

Instructions
 

Preparation

  • Preheat oven to 350°F. In a mixing bowl, combine flour, butter, and powdered sugar until a dough forms. Press into tart pans and bake for 15 minutes. Allow to cool before filling with lemon curd and garnishing with edible flowers.
  • In a saucepan, bring water and butter to a boil. Add flour and stir until a dough forms. Remove from heat and cool for 5 minutes. Beat in eggs one at a time. Pipe onto baking sheet and bake at 400°F for 25 minutes. Cool before filling with whipped cream and raspberry preserves.
  • Preheat oven to 350°F. Combine dry ingredients in a bowl. In another bowl, cream butter and sugar, then add eggs, sour cream, and milk. Mix wet and dry ingredients, adding peppermint extract and food coloring. Pour into mini cake pans and bake for 20 minutes.

Serving

  • Arrange the mini desserts on a platter. Serve immediately or store in an airtight container until ready to serve.

  • Store any leftover desserts in an airtight container in the refrigerator for up to three days. Lemon tarts should be consumed within two days for best flavor.
