Ingredients
  

Tart Shells

  • 1/2 cup unsalted butter cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 tsp salt

Cream Filling

  • 8 oz cream cheese softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp lemon zest
  • 1/2 cup heavy cream whipped

Toppings

  • 1 cup strawberries sliced
  • 1 cup blueberries
  • 1/2 cup raspberries
  • 2 tbsp apricot jam for glazing

Preparation

  • Combine flour, sugar, and salt in a bowl. Add cold butter and mix until it resembles coarse crumbs. Press the dough into mini tart pans.
  • Preheat the oven to 350°F. Bake the tart shells for 15-20 minutes until golden brown. Cool completely before filling.
  • Beat cream cheese and powdered sugar until smooth. Mix in vanilla extract and lemon zest. Gently fold in whipped cream.
  • Spoon the cream filling into cooled tart shells. Smooth the top with a spatula.
  • Arrange fresh berries on top of each tart, pressing them gently into the cream.
  • Warm apricot jam and brush over the berries to give them a glossy finish.
  • Refrigerate the assembled tarts for at least an hour before serving to set.
  • Serve chilled, garnishing with mint leaves if desired.
