  • 1 electric mixer
  • 1 Mixing Bowl large

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg

Wet Ingredients

  • 1/2 cup unsalted butter softened
  • 1 cup brown sugar
  • 2 large eggs room temperature
  • 1 cup milk
  • 1 tsp vanilla extract
  • 2 cups peeled and chopped apples
  • 1 tbsp fresh grated ginger

Instructions

Preparation

  • Peel, core, and chop the apples into small cubes. Grate the fresh ginger and set aside.
  • In a large bowl, cream together the butter and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and grated ginger.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and nutmeg.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the flour mixture, mixing until just combined.
  • Gently fold the chopped apples into the batter using a spatula, ensuring they are evenly distributed.

  • Store any leftovers in an airtight container at room temperature for up to 3 days. Alternatively, refrigerate for up to a week.
