Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder

Apples

  • 2 cups fresh apples peeled, cored, and sliced
  • 1 tbsp lemon juice

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan to prevent sticking.
  • Peel, core, and slice the apples. Toss them with lemon juice to prevent browning and set aside.

Make the Batter

  • In a large mixing bowl, cream together the butter and sugar until light and fluffy. This should take about 3 to 4 minutes with an electric mixer.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract until well combined.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  • Gradually add the dry ingredients to the wet mixture, alternating with milk, beginning and ending with the flour mixture. Mix just until combined.

Assemble and Bake

  • Pour half of the batter into the prepared pan. Layer with apple slices, then cover with the remaining batter. Smooth the top with a spatula.
  • Bake for 50 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Serving

  • Slice and serve the cake warm or at room temperature. It's delicious on its own or with a scoop of vanilla ice cream.
