Equipment

  • 1 9x13 inch baking pan lined with parchment paper
  • 1 Mixing Bowl large
  • 1 Whisk

Ingredients

Brownie Base

  • 1 cup unsalted butter melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp mint extract
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1/2 tsp salt
  • 1 cup semi-sweet chocolate chips

Chocolate Ganache

  • 1 cup heavy cream
  • 8 oz semi-sweet chocolate chopped

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, leaving some overhang for easy removal.
  • In a large mixing bowl, whisk together the melted butter and sugar until well combined. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla and mint extracts.
  • In a separate bowl, whisk together the flour, cocoa powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips.
  • Pour the brownie batter into the prepared pan, spreading it evenly with a spatula. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Allow the brownies to cool completely in the pan.

Serving

  • To make the ganache, heat the heavy cream in a saucepan until just simmering. Pour it over the chopped chocolate in a heatproof bowl. Let it sit for a few minutes, then stir until smooth and glossy.
  • Once the brownies have cooled, pour the chocolate ganache over the top and spread it evenly. Allow the ganache to set before slicing into squares.
  • Cut the brownies into 8 slices and serve. They pair well with a glass of milk or a cup of coffee.

Storage

  • Store any leftover brownies in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week for longer freshness.
