Equipment

  • 1 Baking Sheet lined with parchment paper
  • 1 electric mixer
  • 1 Mixing Bowl large

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/4 tsp salt

Wet Ingredients

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 2 large eggs
  • 1 tsp vanilla extract

Mix-Ins

  • 1 cup dark chocolate chunks
  • 1 cup dried cherries

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  • In a large mixing bowl, beat the butter, granulated sugar, and brown sugar together until light and fluffy, about 3 minutes.
  • Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract until combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the dark chocolate chunks and dried cherries.
  • Cover the dough and chill it in the refrigerator for at least 30 minutes to prevent spreading.
  • Scoop tablespoon-sized balls of dough onto the prepared baking sheets, leaving space between each cookie. Bake for 10-12 minutes, or until the edges are set.

Serving

  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Serve warm or at room temperature.

Storage

  • Store cookies in an airtight container at room temperature for up to 5 days. For longer storage, freeze the cookies for up to 3 months.
