  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk

  • 2 cups fresh or canned peach slices drained
  • 1 cup chopped pecans

Instructions
 

Preparation

  • Peel and slice fresh peaches or drain canned peaches. Chop pecans into small pieces.
  • In a bowl, whisk together flour, baking powder, baking soda, and salt.
  • In a large mixing bowl, cream butter and sugar until light and fluffy.
  • Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  • Alternate adding dry ingredients and buttermilk to the wet mixture, starting and ending with dry ingredients.
  • Gently fold in prepared peach slices and chopped pecans.
  • Pour the batter into a greased and floured 9-inch round cake pan.
  • Bake in a preheated oven at 350°F (175°C) for 45 to 50 minutes or until a toothpick inserted into the center comes out clean.

Serving

  • Let the cake cool in the pan for 10 minutes before transferring to a wire rack. Serve warm or chilled with ice cream or whipped cream.
