  • 3/4 cup all-purpose flour

  • 1 cup sugar
  • 2 large eggs room temperature
  • 1 tsp vanilla extract

  • 2 cups mini marshmallows
  • 1/4 cup milk
  • 1 cup chocolate chips

Preparation

  • Preheat your oven to 350°F. Grease and flour a 9-inch round cake pan. In a large mixing bowl, combine graham cracker crumbs, flour, and baking powder. In another bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then add vanilla. Gradually mix in dry ingredients until just combined. Pour batter into prepared pan and bake for 30-35 minutes.
  • While the cake is baking, melt mini marshmallows with milk in a saucepan over low heat, stirring until smooth. Once the cake is baked and slightly cooled, poke holes all over the top with a fork and pour the marshmallow mixture over it.
  • Melt chocolate chips in a microwave or double boiler. Pour melted chocolate over the marshmallow-filled cake, spreading evenly with a spatula. Let the chocolate set before serving.

  • Once the chocolate has set, slice the cake into servings and enjoy. This cake pairs well with a cold glass of milk or a hot cup of coffee.
