  • 1/2 cup unsalted butter softened
  • 1 cup creamy peanut butter
  • 2 cups powdered sugar
  • 2 tbsp milk
  • 1 tsp vanilla extract

Preparation

  • Preheat the oven to 350°F. In a large bowl, whisk together the flour, baking powder, baking soda, and salt. In another bowl, beat the butter and sugar until creamy. Add the peanut butter, eggs, and vanilla extract, beating well. Gradually add the dry ingredients alternately with the milk, mixing just until combined.
  • Line a muffin pan with cupcake liners. Fill each liner about 2/3 full with batter. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  • In a medium bowl, beat the butter and peanut butter until smooth and creamy. Gradually add the powdered sugar, beating until fluffy. Add the milk and vanilla extract, beating until the frosting reaches a spreadable consistency.

Serving

  • Once the cupcakes are completely cool, frost them with the prepared peanut butter frosting. Serve immediately or store as directed.
