  • 1 cup sugar
  • 2 large eggs room temperature
  • 1/2 cup coconut milk
  • 2 tbsp lime zest

  • 2 tbsp lime juice

Lime Glaze

  • 1 cup powdered sugar
  • 2 tbsp lime juice
  • 1 tbsp coconut milk

Preparation

  • Preheat oven to 350°F. Grease and flour a 9-inch round cake pan. In a large bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  • In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add to the wet ingredients, alternating with coconut milk and lime zest. Mix until just combined.
  • Pour batter into prepared pan and smooth the top. Bake in preheated oven for about 50 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  • In a small bowl, whisk together powdered sugar, lime juice, and coconut milk until smooth and pourable. Adjust consistency if necessary.
  • Once the cake is completely cooled, drizzle the lime glaze over the top, allowing it to cascade down the sides.

  • Slice the cake and serve it on a platter, optionally garnished with lime slices or toasted coconut.
