Ingredients
  

Crust

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter melted
  • 2 tbsp granulated sugar
  • 1 tsp ground cinnamon

Filling

  • 16 oz cream cheese softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract

Topping

  • 2 tbsp granulated sugar
  • 1 tsp ground cinnamon

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a 9x13 inch baking dish with parchment paper.
  • In a large mixing bowl, combine graham cracker crumbs, melted butter, granulated sugar, and cinnamon. Mix until well combined. Press the mixture into the bottom of the prepared baking dish to form an even layer.
  • Bake the crust in the preheated oven for 10 minutes. Remove from oven and set aside to cool slightly.

Cheesecake Filling

  • In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Add granulated sugar and continue to beat until creamy. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  • Pour the cheesecake filling over the cooled crust, spreading it evenly with a spatula. In a small bowl, mix the topping sugar and cinnamon. Sprinkle over the top of the cheesecake filling.
  • Return the baking dish to the oven and bake for 35-40 minutes, or until the center is set and the edges are lightly golden.

Cooling and Serving

  • Allow the bars to cool at room temperature for 30 minutes, then refrigerate for at least 2 hours before slicing.
  • Once chilled, slice into bars and serve. Enjoy these sweet treats with a hot cup of coffee or tea.
