Ingredients
  

Crust

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter melted
  • 1/4 cup granulated sugar
  • 2 tsp ground cinnamon

Cheesecake Filling

  • 16 oz cream cheese softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract

Topping

  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line a 9x13 inch baking dish with parchment paper.
  • In a large mixing bowl, combine graham cracker crumbs, melted butter, sugar, and cinnamon. Mix until well combined and press into the bottom of the prepared baking dish.

Cheesecake Filling

  • In a clean mixing bowl, beat the cream cheese until smooth. Gradually add sugar, then eggs one at a time, and vanilla extract. Beat until creamy and uniform.
  • Pour the cheesecake mixture over the prepared crust, spreading evenly with a spatula.
  • Mix the cinnamon and sugar for the topping. Sprinkle evenly over the cheesecake layer.

Baking

  • Place the dish in the preheated oven and bake for 35-40 minutes, or until the center is set and the top is slightly golden.

Cooling and Serving

  • Remove from the oven and allow to cool completely in the pan on a wire rack. Once cooled, refrigerate for at least 2 hours.
  • Once chilled, cut into bars and serve. Enjoy the creamy and crunchy textures with each bite.

Storage

  • Store any leftovers in an airtight container in the refrigerator for up to 4 days. For longer storage, freeze the bars for up to 1 month.
