Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract

Preparation

  • In a large bowl, cream the butter and sugar with an electric mixer until light and fluffy. Add the egg and vanilla extract, mixing well. In another bowl, whisk together flour, baking powder, and salt. Gradually add the dry mix to the wet ingredients, mixing until a smooth dough forms.
  • Divide the dough in half. Add red food coloring to one portion and green to the other, kneading until the colors are evenly distributed.
  • Roll out each dough portion into a rectangle on parchment paper. Place one colored dough on top of the other. Gently roll into a log, starting from one of the long sides.

Chilling

  • Wrap the dough log in plastic wrap and refrigerate for at least 60 minutes or until firm.

Baking

  • Preheat your oven to 350°F. Line a baking sheet with parchment paper.
  • Slice the chilled dough into 1/4-inch rounds. Place the slices on the prepared baking sheet, leaving space between each cookie. Bake for 10-12 minutes or until the edges are lightly golden.

Serving

  • Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Serve as part of a festive cookie box or with your favorite holiday beverage.
