Toffee Crunch

  • 1 cup toffee bits
  • 1/2 cup semi-sweet chocolate chips

Buttercream Frosting

  • 1 cup unsalted butter softened
  • 4 cups powdered sugar
  • 2 tbsp heavy cream
  • 1 tsp vanilla extract

Preparation

  • Preheat the oven to 350°F. Grease and flour two 9-inch round cake pans. In a large bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each. Stir in vanilla. In another bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. Gradually add dry ingredients to the wet mixture, alternating with milk. Mix until combined.
  • Divide the batter evenly between the prepared pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  • In a medium bowl, beat the softened butter until creamy. Gradually add powdered sugar, one cup at a time, beating well after each addition. Add heavy cream and vanilla extract, beating until smooth and fluffy.
  • Place one cake layer on a serving plate and spread with a layer of buttercream frosting. Sprinkle with half of the toffee bits and chocolate chips. Top with the second cake layer and spread frosting over the top and sides of the cake. Decorate with remaining toffee bits and chocolate chips.

Serving

  • Slice the cake into 8 servings. Serve each slice with a scoop of vanilla ice cream or a dollop of whipped cream for an extra indulgent treat.
