Ingredients
  

Crust

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup cocoa powder
  • 1/2 cup unsalted butter melted

Cheesecake Filling

  • 16 oz cream cheese softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream

Chocolate Layer

  • 6 oz dark chocolate chopped
  • 2 tbsp unsalted butter

Preparation

  • Mix graham cracker crumbs, cocoa powder, and melted butter until combined. Press into a lined 9x9-inch baking dish. Chill in the refrigerator.
  • Beat cream cheese in a mixing bowl until smooth. Add powdered sugar and vanilla, and mix until combined. Whip heavy cream in a separate bowl until stiff peaks form. Fold whipped cream into the cream cheese mixture.
  • Spread the cheesecake filling over the chilled crust evenly. Chill again while preparing the chocolate layer.
  • Melt dark chocolate and butter together in a heatproof bowl over simmering water. Stir until smooth, then let cool slightly before pouring over the cheesecake layer.
  • Refrigerate the assembled bars for at least 4 hours or overnight to set completely.
  • Cut the chilled bars into slices using a warm knife for clean cuts. Serve immediately or store as needed.
  • Store the bars in an airtight container in the refrigerator for up to 5 days.
