Chocolate Buttercream

  • 1 cup unsalted butter softened
  • 3 cups confectioners' sugar
  • 1/2 cup cocoa powder
  • 1/4 cup heavy cream
  • 1/4 tsp salt

Instructions
 

Preparation

  • Preheat your oven to 350°F. Grease and flour two 9-inch round cake pans. In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the creamed mixture, alternating with buttermilk, mixing just until combined. Fold in chocolate chips.
  • Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  • In a mixing bowl, beat the butter until creamy. Gradually add confectioners' sugar and cocoa powder, beating until smooth. Add heavy cream and salt, beating until light and fluffy.
  • Place one cake layer on a serving plate. Spread a layer of chocolate buttercream on top. Place the second cake layer on top and spread the remaining buttercream over the top and sides of the cake.

Serving

  • Slice the cake into 8 pieces and serve. This cake pairs wonderfully with a scoop of vanilla ice cream or a glass of milk.
