Equipment

  • 1 muffin tin lined with cupcake liners
  • 1 electric mixer
  • 1 Mixing Bowl large

Ingredients

Cupcake Base

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup whole milk

Cherry Filling

  • 1 cup cherry pie filling
  • 1 tbsp cornstarch optional

Frosting

  • 1/2 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp heavy cream

Instructions

Preparation

  • Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners. In a large bowl, cream the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in vanilla.
  • In a separate bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the creamed mixture alternately with milk, mixing well after each addition.
  • Fill the cupcake liners two-thirds full with batter. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow to cool completely on a wire rack.
  • If using cornstarch, mix it with the cherry pie filling in a saucepan. Heat over medium heat until thickened. Let it cool before using.
  • Once cupcakes are cool, use a small knife or corer to remove a small portion from the center of each cupcake. Fill with cherry mixture.
  • Beat the butter until creamy. Gradually add powdered sugar, beating until smooth. Add vanilla and cream, beating until light and fluffy.
  • Pipe or spread the frosting over the filled cupcakes. Decorate as desired.

Serving

  • Serve the cupcakes at room temperature. They pair well with coffee or tea.

Storage

  • Store cupcakes in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate for up to a week.
