Ingredients
  

Crumble Topping

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1 cup brown sugar packed
  • 1/2 cup unsalted butter cold and cubed

Cherry Filling

  • 4 cups cherries pitted and halved
  • 1/2 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish and set aside.
  • In a large mixing bowl, combine the flour, oats, and brown sugar. Add the cold butter cubes and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
  • In a medium saucepan, combine cherries, sugar, cornstarch, and lemon juice. Cook over medium heat, stirring frequently, until the mixture thickens and the cherries start to break down, about 10 minutes.
  • Press half of the crumble mixture into the prepared baking dish to form a base. Pour the cherry filling evenly over the base. Top with the remaining crumble mixture, pressing gently to adhere.
  • Place the assembled bars in the preheated oven and bake for 40 to 50 minutes, or until the top is golden brown and the filling is bubbly.
  • Remove the bars from the oven and let them cool in the pan on a wire rack for at least 30 minutes before cutting into squares.
  • Once cooled, cut the bars into squares and serve immediately. They pair well with a scoop of vanilla ice cream or a dollop of whipped cream.
  • Store any leftover bars in an airtight container at room temperature for up to 3 days, or refrigerate for longer freshness.
  • The bars can be made a day in advance and stored in the refrigerator. Allow them to come to room temperature before serving.
