Equipment

  • 1 Baking Sheet lined with parchment paper
  • 1 electric mixer
  • 1 Mixing Bowl large
  • 1 cookie scoop

Ingredients

Dry Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Wet Ingredients

  • 3/4 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract

Add-Ins

  • 1 cup dried cherries
  • 1 cup chocolate chips

Instructions

Preparation

  • In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar with an electric mixer until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  • Fold in the dried cherries and chocolate chips using a spatula or wooden spoon until evenly distributed throughout the dough.
  • Cover the dough with plastic wrap and chill in the refrigerator for at least 30 minutes. This will help the cookies maintain their shape while baking.

Baking

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Using a cookie scoop, place tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are set and the centers are still soft.

Serving

  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.

Storage

  • Store the cooled cookies in an airtight container at room temperature for up to one week. For longer storage, freeze the cookies for up to three months.
