  • 2 tbsp cornstarch

Cobbler Topping

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp ground cinnamon
  • 1/4 cup unsalted butter cold, cubed
  • 1/2 cup milk

Instructions
 

Preparation

  • Preheat your oven to 375°F. Grease a 9-inch round cake pan with butter or cooking spray.
  • In a large mixing bowl, combine cherries, blueberries, raspberries, sugar, lemon juice, and cornstarch. Stir gently to mix well without crushing the berries.
  • In another bowl, whisk together flour, sugar, baking powder, and cinnamon. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the milk just until combined.
  • Pour the berry mixture into the prepared pan. Drop spoonfuls of the cobbler topping over the berries, leaving some gaps for steam to escape.
  • Place the cobbler in the preheated oven and bake for 45-50 minutes, or until the topping is golden brown and the filling is bubbling.
  • Remove the cobbler from the oven and let it cool for at least 10 minutes before serving. This allows the filling to set slightly.
