  • Preheat your oven to 350°F. Grease and flour two 9-inch round cake pans. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the almond extract.
  • In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Fold in the cherries gently to avoid breaking them.
  • Divide the batter evenly between the prepared pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then remove from pans to cool completely on a wire rack.
  • In a clean mixing bowl, beat the butter until creamy. Gradually add the powdered sugar, one cup at a time, beating well after each addition. Add the heavy cream and almond extract, and beat until the frosting is smooth and fluffy.
  • Place one cake layer on a serving plate. Spread a layer of almond buttercream over the top. Place the second cake layer on top and spread the remaining buttercream over the top and sides of the cake.
