Preparation

  • In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the egg and vanilla extract, mixing until fully incorporated.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and chai spice blend. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Cover the dough with plastic wrap and chill in the refrigerator for at least 30 minutes. This will help the dough firm up and prevent the cookies from spreading too much during baking.

Serving

  • Preheat your oven to 350°F (175°C). Scoop tablespoon-sized portions of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart. Flatten each slightly with the back of a spoon.
  • Bake for 10-12 minutes, or until the edges are golden. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Serve with tea or coffee for a delightful treat.
