Preparation

  • Preheat your oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper, allowing some overhang for easy removal later.
  • In a large mixing bowl, use an electric mixer to cream together the softened butter and granulated sugar until light and fluffy, about 3 minutes.
  • Slowly incorporate the all-purpose flour and salt into the butter mixture, mixing on low speed until just combined. Be careful not to overmix.
  • Stir in the vanilla extract until evenly distributed throughout the dough.
  • Transfer the dough to the prepared baking pan. Use a rubber spatula or your hands to press it into an even layer.

Baking

  • Place the pan in the preheated oven and bake for 35-40 minutes, or until the edges are golden and the center is set.
  • Remove the pan from the oven and allow the shortbread to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
