Ingredients
  

Brownie Layer

  • 1/2 cup unsalted butter melted
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 3/4 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/4 tsp salt

Ice Cream Filling

  • 1 quart ice cream flavor of choice

Chocolate Drizzle

  • 1 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan and line with parchment paper.
  • In a large mixing bowl, combine melted butter and sugar. Stir in vanilla extract and eggs until well mixed. Add flour, cocoa powder, and salt, mixing until smooth.
  • Pour the brownie batter into the prepared pan, spreading evenly. Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. Allow the brownies to cool completely in the pan.
  • Once cooled, lift the brownies from the pan using the parchment overhang. Cut into equally sized squares.

Assembly

  • Place half of the brownie squares on a lined baking sheet. Top each with a scoop of ice cream, then cover with another brownie square to form a sandwich.
  • Place the assembled sandwiches in the freezer for at least 2 hours, until the ice cream is firm.

Finishing Touch

  • In a small saucepan, heat chocolate chips and heavy cream over low heat, stirring constantly until smooth. Remove from heat.
  • Remove sandwiches from the freezer and drizzle the chocolate over the top of each. Return to the freezer for 10 minutes to set the chocolate.

Serving and Storage

  • Once the chocolate is set, serve the brownie sundae ice cream sandwiches immediately.
