Preparation

  • Preheat your oven to 350°F (175°C). Prepare a 9-inch round cake pan by greasing it and dusting lightly with flour.
  • In a medium saucepan, melt 1/4 cup of unsalted butter over medium heat. Stir continuously until the butter turns golden brown with a nutty aroma. Remove from heat and allow to cool slightly.
  • Arrange the sliced peaches in the bottom of the prepared cake pan. Sprinkle 1/2 cup brown sugar evenly over the peaches and pour the cooled brown butter on top.
  • In a large bowl, whisk together 2 cups of all-purpose flour, 1 tsp baking powder, and 1/2 tsp salt. Set aside.
  • In another bowl, cream together 1/2 cup softened butter and 3/4 cup packed brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
  • Gradually add the dry ingredients to the wet mixture, alternating with 1/2 cup whole milk and 1 tsp vanilla extract. Mix until just combined, without over-mixing.
  • Pour the batter over the peach slices in the cake pan. Smooth the top with a spatula to ensure even baking.
  • Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan for 10 minutes.
  • Carefully invert the cake onto a serving plate. Serve warm, perhaps with a scoop of vanilla ice cream or a dollop of whipped cream.
