Creamy Frosting

  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 3 cups powdered sugar
  • 1 tsp vanilla extract

Preparation

  • Preheat oven to 350°F. Grease and flour a 9-inch round cake pan. In a large mixing bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in lemon zest and juice.
  • In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, beginning and ending with dry ingredients.
  • Gently fold in fresh blackberries coated with a little flour to prevent sinking. Pour the batter into the prepared pan and smooth the top.
  • Bake in preheated oven for 50 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
  • In a large bowl, beat together cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, beating until light and fluffy.
  • Once the cake is completely cooled, spread the frosting evenly over the top and sides of the cake. Decorate with additional blackberries if desired.

Serving

  • Slice the cake into 8 pieces and serve with a cup of hot tea or lemonade. Enjoy the refreshing flavors of lemon and blackberry with each bite.
