  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup cocoa powder

  • 1 cup granulated sugar
  • 1 cup whole milk

Cherry Filling

  • 1 cup cherries pitted and halved
  • 2 tbsp sugar

Whipped Cream

  • 1 cup heavy cream
  • 2 tbsp powdered sugar

Preparation

  • Preheat the oven to 350°F. Grease and flour two 9-inch round cake pans. In a large bowl, cream together the butter and sugar until light and fluffy. Add in the eggs, one at a time, beating well after each addition. In another bowl, sift together the flour, cocoa powder, and baking powder. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes.
  • In a saucepan over medium heat, combine the cherries and sugar. Cook until the cherries release their juices and the mixture thickens slightly. Allow to cool completely before using.
  • In a chilled bowl, whip the heavy cream with powdered sugar until soft peaks form. Keep refrigerated until ready to use.
  • Place one cooled cake layer on a serving plate. Spread a layer of whipped cream over it, followed by a layer of cherry filling. Place the second cake layer on top and repeat the process, finishing with a layer of whipped cream on top.

Serving

  • Chill the assembled cake for at least an hour before slicing. This will help the layers set and make slicing easier. Serve the cake with a side of coffee or tea to enhance the flavors.
