  • 1 electric mixer
  • 1 Mixing Bowl large

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Wet Ingredients

  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 1 cup buttermilk

Add-ins

  • 1 cup fresh mixed berries strawberries, blueberries, raspberries

Frosting

  • 1 cup unsalted butter softened
  • 4 cups powdered sugar
  • 1/4 cup heavy cream
  • 1 tsp vanilla extract
  • Few drops of pink food coloring

Instructions

Preparation

  • Preheat your oven to 350°F. Grease and flour two 9-inch round cake pans.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
  • Gently fold in the fresh mixed berries to the batter, being careful not to overmix.
  • Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.

Frosting and Assembly

  • Beat the softened butter until creamy. Gradually add powdered sugar, heavy cream, and vanilla extract, beating until smooth. Mix in pink food coloring until the desired shade is achieved.
  • Place one cake layer on a serving plate and spread a layer of frosting on top. Add the second layer and apply a crumb coat of frosting. Chill for 30 minutes, then frost completely and decorate with fresh berries and edible flowers.

Serving and Storage

  • Slice the cake and serve to guests. Enjoy the fresh berry flavors and creamy frosting.
  • Store any leftover cake in an airtight container at room temperature for up to two days or refrigerate for extended freshness.
