Equipment

  • 1 9-inch round cake pan greased and floured
  • 1 electric mixer
  • 1 Mixing Bowl large

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Wet Ingredients

  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 1 cup milk

Berry Mixture

  • 1 cup fresh strawberries hulled and halved
  • 1/2 cup fresh blueberries
  • 1/2 cup fresh raspberries

Instructions

Preparation

  • Preheat your oven to 350°F. Grease and flour a 9-inch round cake pan to prevent sticking.
  • In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In another large bowl, use an electric mixer to beat the butter and sugar together until light and fluffy.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the milk, until the batter is smooth.
  • Gently fold in the fresh strawberries, blueberries, and raspberries, being careful not to crush them.
  • Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  • Once cooled, frost the cake with your choice of frosting and decorate with additional fresh berries on top.
  • Serve the cake at room temperature, slicing into 8 servings. Enjoy!
  • Store any leftover cake in an airtight container in the refrigerator for up to 3 days.
