Coconut Frosting

  • 3 cups powdered sugar

  • 1 tsp vanilla extract
  • 1 1/2 cups sweetened shredded coconut

Preparation

  • Preheat your oven to 350°F. Grease and flour two 9-inch round cake pans. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add the eggs, milk, oil, and vanilla extract. Mix until well combined. Stir in boiling water until the batter is smooth.
  • Divide the batter evenly between the prepared pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  • In a large bowl, beat the butter until creamy. Gradually add powdered sugar and coconut milk, beating until fluffy. Stir in vanilla extract and shredded coconut.
  • Place one cake layer on a serving plate and spread with frosting. Top with the second layer and frost the top and sides of the cake. Garnish with toasted almonds if desired.
