  • 3 cups powdered sugar
  • 2 tbsp almond milk
  • 1 tsp almond extract
  • 1/4 tsp salt

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. Cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla and almond extracts.
  • In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, alternating with the almond milk. Mix until just combined.
  • Divide the batter evenly between the prepared pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean. Cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
  • In a large bowl, beat the butter until creamy. Gradually add the powdered sugar, beating until smooth. Mix in the almond milk and almond extract until fully combined. Adjust the consistency with additional milk or sugar as needed.

Serving

  • Place one cake layer on a serving platter. Spread a layer of frosting over the top before placing the second layer on top. Frost the top and sides of the cake, smoothing with a spatula for a clean finish. Slice and serve.
